White Sauce 6 SERVINGS
 2 Tbsp. butter  1/4 tsp. salt
 3 Tbsp. flour  Dash cayenne
 1 cup Unsweetened WESTSOY  pepper (optional)
Melt butter, add flour and blend. Slowly, add WestSoy stirring to blend. Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens. Add salt and cayenne
Scalloped Potatoes 8 SERVINGS
6 Cups water  4 Tbsp. flour
6 medium potatoes  1/4 tsp. garlic powder
.... (about 2 pounds)  1 1/2 cup shredded
 ....pared and cut into  ....cheddar cheese or
 ....1/4-inch slices  ....alternative
3/4 cup chopped onion  2 cups Unsweetened
1/2 cup diced green pepper  ....WESTSOY
2 Tbsp. butter  Salt and pepper
Bring water to boil, add potatoes, onion and green pepper. As soon as water resumes boiling, remove from heat and drain vegetables. Turn into a greased 7 1/2 inch x 12 inch baking dish. Melt butter in medium-sized pan, stir in flour until well mixed. Gradually stir in WestSoy and cook, stirring until mixture thickens and begins to boil. Remove from heat and stir in 1 cup shredded cheese or alternative, garlic powder, and salt and pepper to taste. Pour over potatoes and stir gently to combine. Sprinkle remaining cheese over top. Bake, uncovered, at 350° F. for 35 to 40 minutes until potatoes are tender and the sauce is bubbly around edges.
